*Chickpeas in red barley*
4 portions
What do you need:
2 peppers🌶
1 aubergine🍆
200gr pearl barley
350gr cooked chickpeas
1/2 onion
30gr olive oil
Tomato passata🍅🍅🍅
Basil and salt to taste
Preparation:
Cook the barley in salty boiling water for 40 minutes, in the mean time, in another pan cook the tomato passata with 15gr olive oil, 1/4 of the onion and basil for 15 minutes.
In another pan add 2 peppers and 1 aubergine with 15gr olive oil. Cook it until soft. At the end, add the cooked (tinned) chickpeas to the vegetables, the barley and the passata.
Add some fresh basil to taste.
