A complete and “proteinful” meal. The perfect recipe for a cold December evening.
You will need:
Time:
1.5 hours (if using dry beans/legumes, you will need to put them in water the night before, and keep them soaking for at least 8 hours).
Method:
If using dry beans/legumes, remember to soak them in water with 1tbsp of bicarbonate of soda the night before. If using tinned legumes, wash them before cooking, and start straigh-away.
In a pan, boil the beans and then add the diced celery, onion and carrot with a pinch of salt. Cook for at least 90 minutes if using dry beans; 45 minutes if using tinned beans. In parallel, cook 30gr of pasta in a small pan and, when ready, add 120gr of beans, which by now will be soft and creamy. Add a tbsp of olive oil and a dust of parmesan cheese, and serve.
You might want to use a different pulse, or different legumes together, such as, for example, a mix of chickpeas, borlotti, black eye peas, and cannellini beans.
