This is a great recipe for a cold day, when you need a warm and nutritious meal, suitable for the whole family.
You will need:

30 minutes (10 mins preparation + 20 mins cooking time)
Preparation:
Cook the diced onion in olive oil for just a few seconds, until soft, then add salt, basil and the rice. Stir for few minutes, and then add the peas and tomato passata. Add 950ml of water; cook with a closed lid for 20 minutes and, at the end, add the mozzarella cut in 1cm pieces. Serve hot. Tips: mozzarella can be replaced by parmesan cheese, and the peas with broccoli, spinach, or whatever you have in you freezer!
