A lovely recipe, suitable for vegetarians.

You will need:

  • 375gr plain flour
  • 120gr olive oil
  • 90gr cold water
  • a pinch of salt (if you like it)
  • dried garlic
  • broccoli
  • tomatoes (any type)
  • 2 eggs
  • 30gr mozzarella cheese

Time:

45 minutes (30mins preparation + 15mins in the over)

Preparation:

Mix the flour, olive oil and water, and knead into a dough. Wrap it in a towel and place it in the fridge for 15 minutes. Boil the tomatoes and broccoli until tender; drain and add the garlic and a pinch of salt (you can use different spices too). Roll the dough, and put it in an oven dish (use baking paper rather than oil to grease the dish). Add the vegetables, two beaten eggs and the mozzarella cheese. Bake it in a pre-heated oven at 180°C for 15 minutes.
